Sadly, this Salad, abeit delicious, is a send off for one of the founding memebers of the Salad Posse.
Gillian's passion for Salad was well known, so a Salad send off seemed appropriate.
Gillian is moving to BC to be wild and free and she will be missed. It is undetermined at this time who will replace her in the Salad Posse.
This was a Baby spinach salad with Greek yogurt dressing (yogurt, lemon juice, white wine vinegar, honey) and a lot of delicious extras. This one kinda bends the healthy salad rules a little bit, but it was for a treat :)

It was setup like a salad bar and people could add:
Fresh cut strawberries
Diced Fuji apples
Bacon ;)
Candied Pecans
Craisins
Feta Cheese
and fresh cut Basil

CopyCat Salad
This week we decided to copy a Salad from Jack Astors - "The Smiling Buddha"
Ingredients are
Mixed Greens
Strawberries
Apples
Pears
Dried Craisins and Apricots
Goat Cheese
Quinoa
Pecans
Chicken
aaaaan a Simple Honey Dijon dressing
a bit more Carbs in this salad than usual, but it's damn tasty.

Asian Style Salad
This Salad was nice and fresh. The marinated salad gets mixed with Baby spinach.
The marinated mixture is shaved carrots, oranges, onions canned Lima beans and Greenbeans.
The dressing is sesame oil, soy sauce, orange juice, white wine vinegar, agave syrup and scallions. It could have a bit more punch though. I held back on the soy sauce and sesame oil and substituted apple juice with orange juice, so I should really pump it up with some more of that or add some spices to it.
All in all though, top it off with some sliced almonds and it's a great light salad.

Greatest Chicken Salad
This one was based off of a Jamie Oliver Salad.
Arugula and Baby spinach was the green combo for this one and they work so well together :).
Green and Red Peppers add some colour and crunch and red onions and sun-dried tomatoes add some punch.
tie it all together with some Balsamic Vinaigrette
Substitutions: Brown rice bread optional instead of croutons; Pecans optional instead of Bacon

Waldorf Salad (but not really)
WEEK OF MAY 6th 2013
What may have started out as apple, lettuce, mayo and lemon has transformed into this!
Blueberries, Strawberries, Apples Spinach, Walnuts and Dressing (Greek Yogurt, Lemon, Dijon honey).

We are the Salad Posse
The members of the Salad posse are Open Text coworkers Alex Hayes, Gillian Hanson and Michelle Haack.
In a decision to made in honor of good health, we decided to form a Salad group. We would decide on a salad for the work week and make each individual responsible for bringing certain ingredients for the salad. Work together with people and being accountable has made salad eating a daily event for us.
I won't get into the benefits of eating leafy greens everyday, but needless to say, We all feel like we are making a positive impact on our health.
We are going to post our Salad each week. Food is all about enjoying what you eat and sharing the experience with others, otherwise it's just a chore.
